The way I bake what my husband calls "egg pods" and my mother-in-law calls "mini quiches" is to break 1 egg into a silicone muffin cup and add tarragon, cheddar, a little pepper, whatever else looks good, and a chunk of butter, and mix it together.

Ingredients
- Nonstick cooking spray, for the muffin tin
- 1/2 cup shredded Cheddar
- Kosher salt and freshly ground black pepper
- 6 large eggs
Steps
- Preheat the oven to 350 degrees F.
- Spray a 6-cup muffin tin generously with cooking spray.
- Toss any additional ingredients you want together, divide the mixture evenly among the muffin cups, and pressing down lightly to compact.
- Crack an egg into a small bowl and then slide it into one of the cups; repeat with the remaining eggs.
- Sprinkle lightly with salt and pepper.
- Bake until the egg whites are just set but the yolks are still a little runny, about 15-19 minutes
